For this activity, you’ll need:
- 4 eggs
- 1 tbsp fresh parsley, chopped
- Olive oil
- 50g microgreens
- 4 radishes, sliced
- 2 spring onions, sliced
- Salt
- Pepper
- Whisk for whisking, knife for chopping, bowl for mixing, and frying pan for frying
Step 1: Get whisking
- Crack all 4 eggs into a bowl, add the chopped parsley and whisk together until well mixed. Add a little salt and pepper for seasoning
Step 2: Get frying
- Pour some olive oil into your frying pan and heat for a minute, before adding the spring onions, radishes and 40g of microgreens, adding a pinch of salt to the mix
Step 3: Get mixing
- Mix in the egg mixture you made in Step 1 and fry the omelette for 2-3 minutes
Step 4: Get flipping
- Flip the omelette and fry for another 1-2 minutes
Step 5: Tuck in!
- Serve your omelette and sprinkle the remaining 10g of microgreens on top to garnish
